Mango Curry Chicken Salad is prepared with a creamy fruity spicy sauce. For the Mango Curry Chicken Salad, first place chicken breast fillet in a pot. Cover with water. Add instant stock. Bring to a boil. Reduce temperature. Simmer for 20 minutes. Remove chicken breast fillet from broth. Allow to cool. For the chicken salad, chop into small pieces. Mix yogurt, fresh cheese, mango chutney and lemon juice. Season the mango curry sauce with a pinch of salt, Indian curry powder and sambal oelek paste. Mix the chicken salad with the mango curry sauce.
