Veal fillet with cream mushrooms

To veal fillet with cream mushrooms are served mini potato dumplings. Preheat oven to 200° C. Sear the veal fillet all around for 4 minutes in butter and lard. Season with salt and pepper. Put the veal fillet into a greased casserole dish. Cook on the middle shelf in the oven for 20 minutes. Brush now and then with roast juice. Clean mushrooms and cut into slices. Cut onion into cubes. Heat butter in a pan. Sauté mushrooms vigorously until they begin to brown. Reduce temperature. Add onions and crushed garlic. Stir in vegetable stock and cream. Strip leaves from thyme sprigs. Season creamed mushrooms with thyme leaves, pepper and salt. Let the creamed mushrooms simmer slightly. Mix starch flour with a little cold water. Bind the mushrooms with it. Salt Bring water to a boil in a saucepan. Reduce temperature. Add Mini Potato Dumplings. Let simmer for 12 minutes. Let the veal fillet rest for a few minutes before cutting. Stir the juices from the veal fillet into the cream sauce.
