Chicken fricassee with fries

Chicken fricassee with fries is served with Bearnaise sauce. For the french fries, preheat the oven to 220° C. Line a wire rack with baking paper. Spread the french fries potatoes on it. Bake on the middle shelf for 20 minutes. For the chicken fricassee, first cut chicken breast fillet into cubes. Cut brown mushrooms into quarters. Green asparagus only needs to be peeled in the lower third. Cut asparagus into pieces. Heat corn germ oil with butter in a pan. Sauté chicken cubes vigorously. Add mushrooms and asparagus to chicken fricassee. Fry on medium heat for 15 minutes. Season with salt and pepper. Mix the frozen peas into the chicken fricassee. Heat Bearnaise sauce in a saucepan, stirring, but do not let it boil. Season fries with salt. Serve chicken fricassee with fries. Spread the Bearnaise sauce over the fricassee.
