Smoked trout salad

Smoked trout salad tastes very aromatic. For the marinade of the smoked trout salad, first fry bacon cubes in a pan until crispy. Add finely diced onion. Sauté lightly. Deglaze with 4 tablespoons white wine. Simmer for 5 minutes. Mix corn germ oil, mustard and honey. Add bacon cubes and onions to marinade. Dissolve drippings with 1 tablespoon white wine vinegar and add to marinade. Season with white pepper. Fillet the smoked trout. Remove head, tail fins and skin. Remove meat from bones. Turn the smoked trout and remove the bones. Cut into small pieces. Chop the lettuce head into small pieces. Mix the lettuce with the marinade. Distribute on plates. Arrange the smoked trout on the salad. Sprinkle with coarsely ground pink pepper.
