Coppa ham canapes

Coppa ham canapes are served with a spicy ricotta cream. First season the fresh ricotta cheese with pepper, salt and dried thyme. Press the garlic through a garlic press and stir it in. Finely dice black olives and dried tomatoes in oil and mix in. Roast pine nuts in a pan, stirring, until they begin to smell fragrant. Stir into the ricotta cream cheese. For the canapes, slice baguette. Spread with ricotta. Fold Coppa ham slices. Arrange two slices of Coppa ham on each canape. Garnish with strips of sun-dried tomatoes and halved black olives.
