Pork loin with horseradish sauce

500 g White cabbage
50 g Streaky bacon
40 g Butter Lard
1 tsp Sugar
0,5 l Vegetable broth
1 tbsp White wine vinegar

0,12 l Milk
1 Onions
2 tbsp Parsley
1 Eggs
20 g Wheat Flour Type 405
600 g Pork fillet
1 tbsp Honey
1 tbsp Olive Oil
2 tbsp Fresh herbs
0,125 l White Wine
2 tsp Starch Flour
4 tbsp Cream
3 tsp Cream horseradish

Grilled pork tenderloin is prepared on the baking tray with a creamy onion mustard sauce. Preheat oven to 225° C and line a baking tray with baking paper. Cut onion into fine slices. In a pan, melt butter and sauté onions. Stir in crème fraiche and mustard. Cut pork fillet into 6 medallions and wrap with bacon strips. Season pork fillet with pepper and place on the baking tray. Spread onion mustard sauce over it and put the baking tray on the middle shelf in the oven. Baked pork fillet 12 to 15 minutes in the oven. Finely chop the parsley. Sprinkle parsley over the pork tenderloin just before serving.
