100 g Mayonnaise
2 tbsp Cream
1 tbsp Honey
1 tsp White wine vinegar
2 tsp Fig mustard
2 tsp Dijon mustard
1 tsp Gin
2 tbsp Dill
Pepper from the mill
250 g Bismarck Herring

Herring in honey mustard sauce can be prepared very well, because it tastes the more aromatic the longer it draws. For the honey mustard sauce first mix mayonnaise, cream, honey and vinegar. Stir fig mustard and Dijon mustard into the honey mustard sauce. Flavour with gin. Chop the dill finely and mix in. Season with pepper. Cut the herring into pieces. Mix herring into the sauce. Garnish with dill. Covered, the herring stays fresh in the refrigerator for 2 to 3 days.
