Djuvec rice with vegetables

For Djuvec rice with vegetables, first pour boiling water over aubergines, zucchini and peppers. Leave to soak for a few minutes. Finely dice onions and garlic. Fry the rice, onions and garlic in oil until transparent. Drain water. Drain the vegetables well. Cut small. Add vegetables to the Djuvec rice. Add diced canned tomatoes with juice. Season with pepper, salt and chili. Bring the Djuvec rice to the boil briefly. Allow to swell for 20 minutes at low level. Stir from time to time. Mix frozen peas with the Djuvec rice and vegetables. Warm up briefly. Sprinkle with parsley.
