600 g Pig shoulder
1 tsp Colourful pepper
0,25 tsp Salt
0,25 tsp Paprika powder
1 tsp Dried marjoram
0,5 tsp Ground caraway seed
2 tsp Mustard Grains

For Thüringer Mett best use lean pork shoulder. Process as freshly as possible and pay attention to extreme hygiene. Cut off rind and outer fat layer. Remove the meat from the bone. Turn well chilled meat through the coarse disc of the meat grinder. The quantity results in about 450 g of lean, tender Thuringian minced pork. Season with coarsely ground coloured pepper, salt, paprika powder, marjoram, carrots and mustard seeds. Knead Thuringian minced pork by hand until smooth. Cut a smaller onion into very fine cubes. Knead under the Thüringer Mett and serve immediately.
