Tomato soup with rice and bacon

Tomato soup with rice and bacon tastes especially hearty. Dice bacon and onions. Cut the leek into rings. Heat the oil in a pot. Fry bacon until crisp. Reduce temperature. Add onions and leeks. Simmer lightly. Add rice. Steam until transparent while stirring. Press garlic through the garlic press and mix in. Add tomatoes with juice. Chop the tomatoes slightly with a wooden spoon. Bring the soup briefly to the boil. Season with salt and pepper. Simmer soup on medium heat for 20 minutes. Cut parsley into strips. Just before serving, sprinkle the tomatoes with soup, rice and bacon.
