Coffee macaroon cookies

For coffee macaroon cookies first beat egg whites until stiff. Stir in the sugar bit by bit. Mix almonds, finely chopped chocolate, flour and coffee powder. Fold the mixture into the beaten egg white. Preheat oven to 180° C. For the cookies, place small wafers of 50 cm diameter on the baking tray. Put coffee macaroon mass with a spoon on top. Bake coffee macaroons cookies on the middle shelf for 25 minutes. Pour the couverture and cream into a bowl and melt in a hot water bath. Allow the chocolate coating to cool slightly. Spread a small blob of chocolate coating on each of the coffee macaroon cookies. Decorate with chocolate beans.
