Hot vegetarian onion soup

Hot vegetarian onion soup can be prepared quickly. Cut onions and leeks into fine slices. Halve the chilli lengthwise. Remove cores. Cut the chilli into fine slices. For the hot vegetarian onion soup first heat 1 tablespoon of oil in a pot. Sauté onions, leeks and chilli. Stir in the tomato purée. Deglaze with white wine. Press garlic through the garlic press and add. Season with salt and pepper. Add the vegetable stock. Bring spicy vegetarian onion soup to the boil briefly. Reduce temperature. Round off with sherry. Finely chop the parsley. Sprinkle hot vegetarian onion soup with parsley.
