Waffles with fig apple foam
Quantity Ingredient
60 g Butter
60 g Sugar
1 tsp Vanilla Sugar
3 Egg yolk
125 g Wheat Flour Type 405
0,5 tsp Back Powder
0,125 l Milk
1 tsp Lemon peel
5 Albumen
6 Fresh figs
500 g Apple puree

For waffles with figs apple foam first stir soft butter, sugar and vanilla sugar until creamy. Separate 3 eggs into two bowls. Stir the egg yolks into the butter. Mix flour and baking powder. Alternate with milk and stir in. Season with finely grated lemon peel. Beat 3 egg whites until stiff. Lift loosely under the dough. Leave to swell for 30 minutes. For the fig apple foam beat 2 egg whites until stiff. Peel 3 figs, crush with a fork and mix with apple puree. Fold in the egg white loosely. Put the apple foam in the fridge. Lightly grease the waffle iron before each baking. For the waffles, fill in 3 tbsp. dough. Bake the waffles at a low to medium temperature until golden brown. Leave to cool slightly on a cake grid. Cut 3 figs into slices. Serve waffles with apple foam. Decorate fissures with figs.
