Salmon with Noilly Prat Sauce

Salmon with Noilly Prat Sauce

For salmon with Noilly Prat sauce first cook rice. Cut the broccoli into florets. Boil water in a saucepan of salt. Add broccoli. Cook at medium heat for 10 minutes. For the Noilly Prat sauce dice shallots finely and sauté in 1 tablespoon oil. Deglaze with cream. Stir in Noilly Prat. Allow to simmer gently. Set temperature to lowest level. Mix the egg yolks in a bowl with some sauce until smooth, then stir into the rest of the Noilly Prat sauce. Season with salt and pepper. Finely chop the dill and stir in. Rinse off the salmon and remove the scales. Dry the salmon. Heat 1 tablespoon of oil in a pan. Fry the salmon briefly and vigorously on top. Turn to the skin side. Season with salt and pepper. Let the salmon cook at medium heat for 8 minutes.
