Pork fillet with onion mustard crust

Pork fillet with onion mustard crust is served with potato wedges and field salad. Preheat baking oven to 175° C. Cut the pork fillet in half. Heat 1 tablespoon of oil in a pan. Brown the pork tenderloin thoroughly all around. Season with salt and pepper. Place in a casserole dish. Dice the onions and brown them lightly in a pan. Season with pepper and salt and pour into a bowl. For the crust, mix mustard, breadcrumbs, flour and finely chopped herbs with the onions. Onion mustard crust spread on the pork fillet. Press mustard crust lightly. Wash and dry the potatoes and cut them into slices. Mix with 1 tablespoon oil and season with salt and paprika powder. Place the casserole dish on a baking tray. Distribute potato wedges next to it. Bake on the middle rack 25. Clean field salad and mix with carrot salad. Mix 1 tablespoon oil and balsamic vinegar. Season with pepper, salt and pressed garlic. Mix the dressing with the salad. Arrange pork fillet with onion mustard crust, potato wedges and salad.
