Hearty Kassler Muffins

Hearty Kassler Muffins can be prepared very well. For hearty muffins mix wheat flour, yeast, salt and sugar. Knead in lukewarm milk. If necessary, add a little milk until the dough loosely separates from the edge of the bowl. Knead by hand until smooth. Form into a bullet. Cover and leave to rise for 30 minutes in a warm place. Tilt onto a lightly floured work surface. Roll out 1 cm thick. Cut out muffins with a garnishing ring of 8 cm diameter. Knead the rest of the dough again, roll it out and cut it out. Place on a piece of baking paper. Sprinkle with corn flour. Cover with a cloth. Let it go for 20 minutes. Boil enough water in a saucepan. Add Kassler. Allow to steep at low temperature for 20 minutes. Slice the Kassler and leave to cool. For the marinade mix 2 tbsp. oil, vinegar and mustard. Season with pepper. Mix the kassler with the marinade and set aside. Mix fresh cheese with horseradish. Clean the salad. Brush a thin pan with oil and heat. Bake hearty muffins at medium heat for 6 to 7 minutes, turning occasionally. Place on a grid to cool. Cut open hearty muffins. Spread with fresh cheese and cover with salad. Drain the kassler and arrange on top.
