Baked Feta Spinach Potatoes

400 g New potatoes
200 g Spinach
0,5 Onions
Garlic
1 tbsp Olive Oil
Pepper & Salt
100 g Sour cream
60 g Feta cheese
60 g Gouda cheese

Baked Feta Spinach Potatoes can be served as main course or side dish. Pell potatoes boil. Clean and chop the spinach. Finely dice the onions and garlic. Heat oil in a saucepan. Brown the onions and garlic. Add spinach. Put on a lid and stew for 5 minutes at medium temperature. Season with salt and pepper. For baked feta spinach potatoes preheat oven to 190° C. Stir the sour cream with the feta until creamy. Season with salt and pepper. Mix in the spinach. Drain the potatoes, rinse with cold water and halve lengthwise. Lightly hollow out with a teaspoon. Mix the potato mixture with the feta and fill the potatoes with it. Grate the Gouda and sprinkle over it. Put the baked feta spinach potatoes in an oiled casserole dish. Bake on the middle rack for 15 minutes.
