350 g Wheat Flour Type 405
0,5 tsp Salt
250 g Lean curd cheese
1 Eggs

Quark noodle dough can be rolled out with the noodle wood or with the noodle machine. For the quark noodle dough first mix flour with salt. Mix in the quark and egg. Best kneaded by hand. Do not add water. The longer the quark dough is kneaded with the hand bales, the more elastic and shiny it becomes. Cover the quark noodle dough. Leave to rest for 30 minutes at room temperature. Then roll out in portions 2 mm thick. Cut the dough into any shape. Put water in boiling salt for 2 minutes.
