Berlin sweet sour eggs

400 g Floury boiling potatoes
0,1 l Milk
1 Egg yolk
0,75 l Water
1 Onions
1 Bay leaves
1 tsp Black pepper grains
1 tsp Juniper berries
0,125 l Herbs Vinegar
4 Eggs
10 g Butter
10 g Wheat Flour Type 405
0,5 tsp Sugar
1 tbsp Cut leek

Berlin sweet sour eggs are poached and served with mashed potatoes. Salt Boil the potatoes, drain and add the milk. Crush the potatoes to pulp and mix in an egg yolk. For Berliner sweet sour eggs first boil water with onion, bay leaf, pepper grains, juniper berries and vinegar bubbling. Remove spices. Reduce temperature slightly. Break the eggs one by one into a cup. Gently slide into the water. Place the egg white around the egg yolk using two spoons. Berliner sweet sour eggs let infuse 3 minutes. For the sauce melt the butter. Stir in the flour and sweat lightly. Gradually stir in the broth until the sauce becomes creamy. Round off with sugar. Serve Berliner sweet and sour eggs with mashed potatoes and sauce. Sprinkle with cut leek.
