Sauerkraut Lentils Salad
Quantity Ingredient
100 g Green Lentils
500 g Sauerkraut
120 g Carrots
1 Apple
1 tbsp Linseed Oil
1 tbsp Apple vinegar
3 tbsp Apple juice
Pepper & Salt
1 tbsp Smooth parsley

For sauerkraut lentils salad first pour green lentils into a saucepan. Cover lentils with plenty of water. Put a lid on it. Bring to the boil, reduce temperature and simmer for 30 to 40 minutes. Pour the sauerkraut into a salad bowl. Peel, grate and mix in the carrots. Peel apple, cut into short slices and mix with sauerkraut salad. Pour the lentils into a sieve, rinse with cold water, drain and add to the sauerkraut salad. For the marinade, mix oil, vinegar and juice. Season with salt and pepper. Pour salad over the sauerkraut lentils and mix well. Cut the parsley into strips and sprinkle over them.
