Bacon Zucchini Roll with Feta

Bacon zucchini rolls with feta can be served hot or cold. Cut the courgettes lengthwise into 2 mm thin slices. Lay next to each other. Sprinkle with a little salt. Allow to soak for a few minutes. Fry the pine nuts in a pan without adding any fat. Stand aside. Zucchini with kitchen paper dry and in oil from both sides lightly brown. Dry on paper. Season with pepper, finely chopped thyme and rosemary. Cut the bacon lengthwise into 2 mm thin strips. Place the bacon next to each other on a kitchen board. Put the zucchini on the bacon. Sprinkle with pine nuts. Cut feta into 8 pieces. Sprinkle Feta with paprika powder. Put the feta on one end of the zucchini. Roll up the rolls tightly. Heat the oil in the pan again. Fry the rolls all around for 3 to 4 minutes. Drain on paper. Serve bacon zucchini rolls with feta with wooden skewers.
