Apple compote fruit cake

3 Eggs
120 g Sugar
5 tbsp Mineral Water
5 tbsp Maize Germ Oil
150 g Wheat Flour Type 405
1 tsp Back Powder
1 tbsp Breadcrumbs flour
2 packet Ground gelatine
4 tbsp Water
720 g Apple compote
200 g Sour cream
200 g Cream
1 packet Cream stiff
Ground cinnamon

For apple compote fruit cake first preheat the oven to 180° C. Separate the eggs in two bowls. Beat the egg yolks and sugar until foamy. Stir in mineral water with carbonic acid and oil. Beat the egg whites until stiff and fold in. Mix flour with baking powder and stir in. Grease half a baking tray. Sprinkle flour with breadcrumbs. Fill in the dough and smooth down. Bake on the middle rack for 15 minutes. Pour the gelatine and water into a saucepan. Leave to swell for 10 minutes. Warm slightly while stirring. Stir in the apple compote. Take the pot off the stove. Place the plate on a grating grate to cool it down. Put a baking frame around the fruit cake. Spread the apple compote on the fruit cake and allow to cool. Pour the sour cream into a bowl. Whip cream with cream until stiff and fold in. Spread the sour cream on the apple compote fruit cake. Sprinkle with cinnamon.
