Aubergines Feta Tapas

Aubergines Feta Tapas taste warm or cold with fresh baguette. For the tapas, cut the aubergines into 8 slices. Sprinkle with salt and leave to stand for a few minutes until water forms on the surface. Dab aubergines with kitchen paper. Brush a grill pan with oil and heat. Fry the eggplants on both sides for 4 to 5 minutes. 2 tapas are served per serving. Place 2 slices each on tapas plate. For the filling crush Feta with a fork. Mix in the yoghurt. Season feta with pepper, salt, paprika powder, pressed garlic, finely chopped parsley and thyme. Finely dice the tomatoes and olives and mix into the feta cream. Spread the feta on the aubergine slices. Cover the tapas with the remaining slices and press lightly.
