Artichokes Frittata

Artichokes Frittata can be served hot or cold. Drain and quarter the artichoke bottoms. Cut onions and garlic into fine slices. Heat the oil in a pan. Lightly fry the artichokes, onions and garlic. Season with salt and pepper. Beat the eggs for the frittata. Season with salt and pepper. Cut the parsley into strips and mix in. Pour the eggs over the artichokes. Place a lid on the pan. Let the frittata fry at medium temperature for 10 minutes. Slide the frittata onto a plate and cut into quarters.
