Ajvar soup with minced meat

For Ajvar soup with minced onions cut into fine cubes. Drain and chop the aubergines. Heat the oil in a saucepan and brown the minced meat thoroughly. Add onions and aubergines to the minced meat and fry lightly. Stir in the paprika pulp and deglaze with wine. Add Ajvar and extend the soup with broth. Reduce the temperature and melt the cheese in the Ajvar soup. Season with salt and pepper. Serve Ajvar soup with minced meat, cream fraiche and finely chopped parsley.
