Fried egg lemon biscuits

150 g Wheat Flour Type 405
75 g Food starch
Salt
20 g Sugar
1 tsp Lemon peel
2 Egg yolk
120 g Butter
150 g Powder Sugar
12 tsp Lemon juice
220 g Lemon Curd Jam

Fried egg lemon biscuits are baked with a tender short dough. Mix flour, starch, a pinch of salt, sugar and finely grated lemon zest. Add egg yolk. Cut the cold butter into small pieces and knead in. Preheat baking oven to 180° C. Roll out shortcrust pastry in portions on a floured work surface 0.5 cm thick. In between sprinkle with flour. Cut out 30 fried egg biscuits. In the half of the fried egg cookie cut out a hole for the lemon filling. Line a baking tray with baking paper. Bake the fried egg lemon biscuits on the middle shelf for 12 to 15 minutes. Allow to cool on the tray. Mix powder sugar with lemon juice, spread on the fried egg cookies with hole and let dry. Spread the lower halves thinly with Lemon Curd and place the upper halves on top. Fill the holes with Lemon Curd.
