Zucchini Pancakes

250 g Courgette

100 g Wheat Flour Type 405
0,15 l Milk
1 Eggs
1 Onions
Garlic
10 g Parmesan cheese
1 tbsp Basil
1 tbsp Olive Oil

For zucchini pancakes, first grate the zucchini finely, pour into a bowl, season with salt and put aside. For the pancake dough mix flour with milk and let swell for 15 minutes. Stir the egg into the pancake dough. Finely chop onions and garlic and mix with finely grated Parmesan cheese. Cut the basil into strips and add. Pour the courgettes into a sieve, squeeze out well, mix into the dough and season with salt. Heat oil in a pan and fry four small zucchini pancakes.
