Bismarck herring
Quantity Ingredient
600 g Salt Herring
2 Onions
2 Bay leaves
1 tsp Black pepper grains
1 tsp Juniper berries
3 tsp Sugar
1 tsp Salt
0,2 l White wine vinegar
0,3 l Water

Bismarck herring tastes particularly aromatic when prepared with salt herring. Place salt herring in a bowl, cover with water. Cover and soak in the refrigerator for 12 hours. Change the water two or three times. For the broth from the Bismarck Herring, cut onions into rings. Pour into a pot. Add bay leaves, black pepper corns, juniper berries, sugar, salt, white wine vinegar and water. Bring to the boil. Allow broth to cool completely. After the 12 hours, drain the water from the bowl. Remove head and fins. Cut Bismarck Herring lengthwise at the belly. Gut and rinse. Remove the middle bone. Spread Bismarck Herring out flat. Place in a bowl. Cover with broth. Cover and refrigerate for at least 3 days.
