Bismarck Herring

Bismarck Herring

600 g Salt Herring
3 Onions
2 Bay leaves
1 tsp Black pepper grains
1 tsp Juniper berries
3 tsp Sugar
1 tsp Salt
0,25 l White wine vinegar
0,25 l Water

Bismarck herring tastes particularly aromatic when prepared with salt herring. Place the herring in a bowl, cover with water and refrigerate for 12 hours covered. For the brew of Bismarck herring cut onions into rings and fill into a pot. Add bay leaves, pepper grains, juniper berries, sugar, salt, vinegar and water and bring to the boil. Allow the brew to cool completely. Drain water from bowl, remove head and fins, gut Bismarck herring and rinse. Cut into two halves along the spine and remove the middle bones. Cover the Bismarck herring with the cold brew and leave to stand in the refrigerator for 3 days.
