Asparagus Eggs Fricassee

300 g Sweet Potatoes
4 Eggs
1 tbsp Rapeseed Oil
1 Onions
0,1 l Milk
1 tsp Wheat Flour Type 405
Pepper & Salt
0,25 l Vegetable broth
150 g Tins of peas
200 g Glass asparagus
2 tbsp Smooth parsley
100 g Cooked ham

Asparagus eggs fricassee is a simple, inexpensive food that satisfies well. Boil the eggs hard. Peel potatoes and onion, cut into small cubes and sauté in oil. Sprinkle with flour, sweat lightly and deglaze with milk. Fill the fricassee with broth and season with salt and pepper. Bring the fricassee to the boil, cover with a lid and simmer at medium temperature for 5 minutes. Drain the asparagus and peas. Cut the asparagus and ham into pieces and heat in the fricassee with the peas. Peel eggs, cut into cubes and mix in. Cut the parsley into strips and sprinkle with the asparagus eggs fricassee.
