Aubergines Chick peas Bread spread

120 g Dried chick peas
100 g Aubergines in oil
1 tbsp Lemon juice
1 tbsp Garlic Oil
Pepper & Salt

Aubergines chickpeas peas bread spread keeps fresh in the fridge for several days. Cover dried chick peas with water and leave to soak overnight. Drain the water, put the chick peas in a pot, cover with fresh water, cover with a lid and bring to the boil. Cook the chick peas at medium temperature for 90 minutes. Drain the water. Pour the chick peas into a blender jug. Drain the aubergines. Add aubergines, lemon juice and garlic oil and puree finely for the bread spread. Season the bread spread with pepper and salt.
