100 g Rice
0,125 l Vegetable broth
100 g Aubergine puree

Aubergine rice is a side dish that is easy to prepare. For aubergine rice, dice an onion and sauté in oil. Add the rice and fry until translucent. Add the stock, cover with a lid and bring to the boil briefly. Set the temperature to the lowest level and let the rice soak for 20 minutes. Stir in the aubergine puree.
