200 g Wheat Flour Type 405
2 Eggs
1 Egg Yellow

Farfalle noodles are best rolled out with a noodle machine. For the Farfalle pasta dough, first pour the flour into a bowl. Press a depression in the middle. Whisk eggs and egg yolk, add to the mixture and stir into the flour with your fingers. Knead the dough for 10 minutes until smooth. Rinse hands, drain briefly, form the dough into a ball, cover with a bowl and leave to rest for 30 minutes. First roll out the dough in portions with the pasta machine to level 1. In between, sprinkle with flour and at each pass, step up to step 5. Farfalle noodles with a dough wheel in 4 x 5 cm rectangles cut. Press together in the middle to form small loops. Allow Farfalle pasta to dry briefly on a floured work surface. Boil in salt water for 5 to 6 minutes.
