Asparagus roll with smoked salmon

160 g Frozen asparagus
Salt
1 Egg yolk
1 tsp Mustard
3 tbsp Rapeseed Oil
2 tsp Lemon juice
2 tsp Honey
1 tbsp Dill
150 g Smoked Salmon

Asparagus roll with smoked salmon is served with Gravlax sauce. Place 8 asparagus stalks in boiling salt water and cook at medium heat for 10 to 12 minutes. Drain the asparagus and leave to cool. For the Gravlax sauce, stir a very fresh egg yolk with mustard until smooth. Stir in the oil little by little. Stir in lemon juice, honey and finely chopped dill. Wrap smoked salmon in thin slices around the asparagus and cut in half for the rolls. Sprinkle gravlax sauce over the asparagus rolls with smoked salmon and decorate with dill.
