Whole grain couscous

Whole grain couscous is a vegetable side dish prepared with very aromatic dried vegetables. Pour wholemeal couscous into a bowl, pour 1/8 litre boiling water over it and season with instant broth. Let the wholemeal couscous soak for 10 minutes. Put the dried eggplant, dried pepper and dried tomatoes in a second bowl, cover with boiling water and leave to swell for 10 minutes. Drain the water, drain the vegetables and cut into strips. Heat olive oil in a pan and stew the vegetables for a few minutes until soft. Mix the vegetables and lime juice with the wholemeal couscous. Goats Soft cheese in small cubes cut and fold in. Cut the flat parsley into strips and mix into the wholemeal couscous shortly before serving.
