Spelt Spaghetti

Spelt spaghetti are prepared with a pesto of basil and cashew nuts. Boil plenty of water in a large saucepan. Add spelt spaghetti, dried eggplant, dried paprika, dried tomatoes and salt and cook at medium heat for 6 to 8 minutes. For the Pesto Cashew, pour the unsalted nuts, coarsely grated Provolone, basil and 5 tablespoons of basil oil into a mixing cup and puree until creamy using a hand blender. The dried vegetables float on the surface of the water and can easily be lifted out with a skimmer. Remove some cooking water from the spelt spaghetti to dilute the pesto. Cut the vegetables into strips and stew in 1 tablespoon olive oil until soft. Drain the spelt spaghetti, add to the vegetables and mix in the pesto. Dilute as desired with 3 to 4 tablespoons of hot water.
