Roulade with pumpkin

Roulade with pumpkin

Season the roulades with pepper and salt. Brush with mustard and cover with thin slices of ham. Cut 1/2 onion into strips and spread on top. Halve pumpkin, remove seeds, fibres and skin. Cut a piece of pumpkin into thin slices. Place on the wider end of the roulades. Sprinkle with herbs. Lay the sides of the meat over the filling, roll up firmly towards the narrow end and wrap around with yarn. Turn the roulades in flour. Brown in 2 tablespoons of oil all around. Take it out of the pot. Dice 1/2 onion and garlic. Braise half of it. Sprinkle with 1 teaspoon flour, sauté briefly and pour on the wine. Add roulades. Put a lid on it. Braise at medium heat for 60 minutes. Add the broth little by little. Cut the rest of the pumpkin into slices. Fry 15 minutes before the end of the cooking time in 1 tablespoon of oil. Add the remaining onions and garlic. Season pumpkin with pepper, salt and herbs. Arrange roulades with pumpkin on plates. Puree the sauce and serve with it.
