Apple sour cream cake

300 g Wheat Flour Type 405
0,5 tsp Back Powder
150 g Powder Sugar
1 Organic egg
200 g Butter
1,2 kg Apple
100 g Chopped almonds
50 g Raisins
3 tbsp Sugar
1 tbsp Lemon juice
0,5 tsp Ground cinnamon
0,5 packet Vanilla Pudding Powder
200 g Cream
200 g Sour cream

This apple sour cream cake is baked with a loose short dough and tastes very juicy. For the dough mix flour with baking powder, a pinch of salt and powder sugar. Add a medium organic egg. Cut the cold butter into pieces, add to the flour and knead until smooth with your hands. Line the bottom of a 28 springform pan with baking paper. Fill in the dough and press flat with floured hands. Do not form an edge. Prick the bottom several times with a fork and refrigerate for 30 minutes. Preheat the oven to 200°. For the apple sour cream cake it is best to use a tart sour apple variety such as Boskop or Elstar. Grate the peeled apples coarsely and mix with chopped almonds, raisins, 1 tablespoon sugar, lemon juice and cinnamon. Spread the apples on the cake. For the sour cream pour, mix vanilla pudding powder with cream and sour cream. Pour the icing over the apple pie. Place the cake tin on the 2nd rail in the oven from below and bake the apple sour cream cake for 60 minutes.
