Sheep cheese in bacon coat antipasti

Sheep cheese in bacon coat antipasti is a simple but aromatic appetizer. Clean the rocket salad, rinse and dry in a salad spinner. Cut a tomato without seeds into strips and mix with the rocket. For the vinaigrette, mix 1 tablespoon olive oil and balsamic vinegar and season with ground pepper, salt and garlic. Mix the salad with the marinade and serve on plates. For the antipasti, cut sheep's cheese into 6 cubes and wrap each in a strip of bacon. Heat the remaining olive oil and rosemary twigs in a pan. Fry the sheep's cheese in the bacon coat all around and arrange next to the salad. Remove the crispy rosemary twigs from the pan, chop them up and arrange them on the antipasti.
