Pork Filet alla Saltimbocca

250 g Pork fillet
Pepper from the mill
60 g Parma ham
8 leaf Sage
1 tbsp Olive Oil

Pork Filet alla Saltimbocca is a cheaper alternative to the classic Saltimbocca with veal escalope and tastes just as tender and juicy. Cut the pork fillet from the thicker end into finger-thick slices and season with ground pepper and salt. Wrap half a slice of Parma around each fillet. Put a leaf of sage with a wooden skewer on the pork filet alla Saltimbocca and fry in olive oil from both sides until hot. Reduce the temperature to medium and fry the pork tenderloin for about 4 minutes while turning. Filet alla Saltimbocca tastes good with fresh ciabatta.
