For the apple figs jam best use gelling sugar "2:1" so that the jam tastes more fruity. Peel apple, remove seeds, cut into small cubes, weigh and fill into a pot. Rinse and dry the figs and remove the stems. Quarter the figs, weigh and add to the pot. Stir in the gelling sugar and lime juice and let it steep for a few minutes. Puree the apple figs jam and bring to the boil while stirring. Cook the jam for approx. 4 minutes, pour into a jar and close immediately.
