Pork Filet Leek Pan

400 g Leeks
300 g Pork fillet
30 g Bacon bacon cubes
20 g Butter Lard
10 g Wheat Flour Type 405
0,125 l White Wine
0,25 l Beef Meat Broth
3 tbsp Cream
Pepper & Salt

For the pork fillet leek pan leek clean and cut into rings. Cut the pork fillet into slightly thicker slices. Cut the bacon into small cubes. First heat half of the clarified butter in a pan and fry the bacon vigorously in it. Add the pork fillet and sauté briefly. Only turn the fillet when it is slightly browned and can be easily removed from the bottom of the pan. Brown the fillet from the other side until it is browned. Set the temperature to medium and cook the fillet for about 2 minutes. Remove the fillet of pork together with the bacon from the pan and keep warm. Heat the remaining clarified butter in a pan and fry the leek rings at medium temperature until the leek becomes soft. Sprinkle flour over the leek, sauté briefly and deglaze with white wine. Add meat stock and round off with cream. Add the pork fillet back to the leek in the pan and season with salt and pepper. Pork fillet leek pan tastes very good with french fries or rice.
