Zucchini Cheese Salad

Zucchini cheese salad tastes particularly aromatic with sheep cheese. For the zucchini cheese salad cut a zucchini into thin slices. Peel shallots and garlic and cut into fine slices. Heat the oil in a pan, add the courgettes, shallots and garlic and fry occasionally until the courgettes are soft and brown. Zucchini with pepper from the mill and salt season and with white balsamic vinegar deglaze. Pour the zucchini into a bowl. Cut the peppers into strips and mix into the zucchini with the crushed sheep cheese. Cut smooth parsley into fine strips. Sprinkle the zucchini cheese salad with parsley shortly before serving. Zucchini cheese salad can be served hot or cold.
