Pork fillet with herbs butter

Pork fillet with herb butter is served with rosemary potatoes. Preheat baking oven to 225° C. Rinse and dry the potatoes. Pour the oil into a bowl. Season with pepper, salt and a pressed garlic clove. Chop the needles of 3 rosemary twigs small. Add to the marinade. Chop the potatoes coarsely. Mix with the marinade. Spread on a baking tray. Bake on the middle rack for 25 minutes. Season pork fillet with pepper and salt. Place bacon in strips slightly overlapping on a piece of foil. Place the pork fillet crosswise on one edge. Wrap it tightly with the help of the foil. Remove foil. Heat the lard in a pan. Fry the pork fillet all around for 5 minutes. Place the fillet of pork on the baking tray. Bake for 15 minutes. Finely chop the remaining rosemary and parsley for the herbs and butter. Mix into the soft butter. Season herb butter with pepper, salt and pressed garlic. Put the herbs butter on a piece of foil. Form into a role. Cool in the freezer for a few minutes. Cut herb butter into slices shortly before serving.
