Falafel with hummus

Falafel with hummus

Falafel with hummus is served as a starter with flat bread. For falafel, chop an onion very finely. Fry in 1 teaspoon of oil. Season onions with salt and cumin. Let it cool down. Pour 250 g chick peas into a sieve. Rinse with water until the water stops foaming. Mash the chickpeas and egg. Mix onions and breadcrumbs with flour. Season with salt. With slightly moistened hands roll 9 small falafels. Lightly fry the falafel in 1 tablespoon of oil. For the hummus, rinse 250 g chickpeas. Drain well. Mash half of the chick peas with sesame paste and lemon juice. Stir in well drained yoghurt. Arrange hummus on plates. Press a depression in the middle with a tablespoon. Pour in the remaining chick peas. Drizzle with remaining oil. Sprinkle the edge of the hummus with paprika powder and cumin. Arrange the falafel on the edge of the hummus. Finely chop the parsley and sprinkle over it.
