Noodle soup with salmon

Noodle soup with salmon is prepared with fresh spinach and smoked salmon. First put the rigatoni in boiling salted water and cook for about 14 minutes until done. If you use another kind of noodles for the noodle soup with salmon, the noodles need only about 10 minutes cooking time. Meanwhile, wash and drain the spinach. Remove the thicker stems and chop the spinach coarsely. Cut the shallots into fine cubes. For the noodle soup with salmon in a pot let out butter, add shallots and spinach and sauté for about 3 minutes while stirring until the spinach collapses. Deglaze with white wine, add vegetable stock and bring to the boil briefly. Stir the starch flour with the cream until smooth and bind the soup lightly with it. Pour the rigatoni into a sieve, drain well and add to the soup. Cut the smoked salmon into strips and heat slightly in the noodle soup. Lightly season the noodle soup with salmon, white pepper and salt.
