Sliced pork fillet

Sliced pork fillet is prepared in a creamy mushroom sauce and served with potato wedges. For the mushroom sauce, first pour the dried mixed mushrooms into a small bowl, cover with water and leave to soak for approx. 30 minutes. Meanwhile preheat the oven to 220°. Wash potatoes thoroughly, dry and cut into slices. Pour 1 tablespoon corn oil into a bowl, season with pepper, salt and paprika powder and turn the potato wedges in it. Place the potato wedges on a baking tray and bake on the middle shelf for about 30 minutes. Turn Potato Wedges once after approx. 15 minutes. Meanwhile, prepare the fillet of pork cut into strips. For this, cut the fillet of pork first into slices and then into strips. Cut onion and garlic into fine cubes. Heat 1 tablespoon corn oil in a pan. Brown the pork tenderloin vigorously. Add the onions and garlic, fry lightly and reduce the temperature. Remove the needles from the thyme twigs. Season the fillet with thyme, pepper and salt and round off with cream. Add the mushrooms with approx. 1/8 litre mushroom soaking water and fill up with meat stock. Bring the fillet of pork to the boil again and thicken with dark sauce thickener. Arrange the fillet of pork cut into strips with potato wedges and garnish with fresh thyme twigs.
