Falafel with salad

Falafel with salad is served with a creamy yoghurt sauce. For the falafel, cut an onion into fine cubes, sauté in 1 teaspoon oil and season with salt and cumin. Fill the chick peas into a sieve, rinse, drain and puree with the egg. Knead the breadcrumbs into the flour. Form small falafel and fry in 2 teaspoons of oil. Mix yoghurt and 1 teaspoon oil. Season with salt, paprika powder and cumin. Cut the peppermint leaves into fine strips. Stir into the yoghurt sauce. Place in the fridge until serving. Pick salad clean. Peel salad cucumber and cut into small cubes. Dice the peppers and cut the tomatoes into quarters. Mix salad and serve with falafel. Sprinkle with yoghurt sauce.
