Carrots Potato Salad

Carrot Potato Salad is prepared with grated raw carrots, making it taste very juicy. For the carrots potatoes salad firmly cooking potatoes as boiled potatoes in approx. 25 minutes cook. Drain the jacket potatoes and place in cold water for quick cooling. Meanwhile prepare the salad dressing. Season salad cream with white wine vinegar and stir with vegetable stock until smooth. The salad dressing initially becomes very liquid, but is absorbed by the potatoes. Season the salad dressing with pepper and salt. Peel and grate the carrots and mix into the salad dressing. Peel the potatoes, cut into slices and fold into the carrots. Cut a small mild white onion into fine cubes and add. Cut the gherkins into small strips and mix the potato salad with the carrots. Chop the parsley finely and sprinkle the potato salad over the carrots shortly before serving.
