Curry Rice Goulash

80 g Leeks
1 Onions
1 Chilli pod
250 g Pork fillet
2 tbsp Peanut Oil
100 g Rice
30 g Cashew kernels
Pepper & Salt
Curry
Turmeric Powder
0,125 l Vegetable broth
0,125 l Milk
180 g Mango

For curry rice goulash first clean leek, cut into rings and finely dice onions. Cut the chilli pepper into rings and remove the white seeds. For the goulash, cut the pork fillet into cubes. Heat peanut oil in a casserole and sauté pork fillet briefly at high temperature. Add leek, onions, chilli pepper, rice and cashew nuts and sauté briefly while stirring. Curry rice goulash with pepper, salt, curry and turmeric strongly season. Stir the vegetable broth and milk into the curry rice goulash, cover with a lid and bring to the boil once. Meanwhile, peel a ripe mango, cut into small cubes and mix into the curry rice goulash. Set the temperature to the lowest level and gently stew the curry rice goulash for about 20 minutes.
