For the cold slaughtering platter you can prepare Kassler salmon meat yourself, as it tastes juicier than Kassler cold cuts. Bring enough water to the boil. Switch temperature to level 1. Let Kassler steep in hot water for 20 minutes. Allow to cool. In the meantime, decorate the cold slaughter plate. Season the mince with salt and pepper. Cut the shallots into rings. Spread over the mince. Roll up onion meat. Blood sausage and liver sausage cut open. For the cold slaughtering plate cover a wooden board with salad. Arrange the pork loin, mince, onion, meat, blood sausage and liver sausage on top. Decorate with radishes, parsley, carrots, salad and mustard. Serve cold meat platter with baguette.
